12) Long ago, in a serene Udangudi village, Tamilnadu, India surrounded by palm trees, farmers discovered a golden treasure—Palm Jaggery. By boiling the Sap from Palm trees, they created a natural sweetener rich in iron, magnesium, and essential nutrients. Unlike sulphur added white sugar, Palm Jaggery had a low Glycemic Index, making it healthier. Villagers believed it gave strength and vitality, using it in medicines and traditional remedies. During festivals, this mineral-rich jaggery became a key ingredient, adding earthy sweetness and warmth to their cherished sweets and desserts.
*The glycemic index (GI) of palm sugar is 35. This is lower than the GI of regular Sulphur Added White sugar, which is 60–65.
